Hominy is corn that has been soaked in an alkali solution of either lime or lye. The soaking removes the hull and germ of the corn and causes the grain to puff up to twice it’s normal size.
Posole is a hearty stew from Mexico traditionally made with pork and hominy. Hominy can also be ground and simmered to make grits.
