Simple Kale & Raisin Salad

I stand over the sink rinsing a bunch of kale before separating the stems from the leaves. With each tear a comforting “crunch” resounds and then the familiar jingle of Charlie’s collar as he trots into the kitchen, stops at my feet and looks up at me expectantly. I hand him the kale stalk I have just liberated from its leaves. He takes it in his mouth and triumphantly trots to his bed to enjoy his prize. Crunch, crunch, crunch he goes until it is gone and he returns for another. Whenever I cook with kale (which is pretty much every day) Charlie enjoys the spoils. He likes other vegetables as well but kale seems to be his favorite. I have to say I am strangely proud of my little kale loving pup.

This is a simple salad with a lot of zing. The Spicy Tahini Dressing and raisins alone provide enough flavor that you can forgo the extra step of making the za’atar. However, I recommend making a batch and keeping it in the fridge because it adds a bit of exotic spice to just about anything. It is very easy to make and you will be glad you did.

1 bunch kale (curly or lacinto)
1/4 teaspoon sea salt
handful of raisins
sprinkling of za’atar (homemade is best – I used the recipe on 101 Cookbooks)

Spicy Tahini Dressing:
1 tablespoon tahini
1 teaspoon miso
1 teaspoon fresh lemon juice
1/8 teaspoon cayenne
Approx 5 tablespoons water

Wash kale and separate leaves from stems. Roughly chop or tear with your hands and put in a large bowl. Sprinkle with sea salt and massage the leaves with your hands until they become a shade darker and a bit more fragrant.

Make the dressing by combining all ingredients and mixing well. Toss with the kale and add a generous handful of raisins and a sprinkling of za’atar.

I guarantee you will want a nice big plate of this satiating salad.

Makes 2 dinner plate servings or 4 side plate servings.
