Warm Cinnamon Quinoa and Pear Cereal with Dried Fruit and Nuts

I just returned from New York where I was supporting my amazingly talented and flexible sister as she competed in the Bikram Yoga National Championships. On the morning of the finals, my mother and I had been released from our duties just long enough to eat breakfast before we were summoned back to distract Heather with funny stories as she stretched. When Mum suggested Le Pain Quotidien I was enthusiastic as I’d read a few yelp reviews that said they had Almond Milk. I was really looking forward to an Almond Milk Latte but was not expecting to be so taken with the Warm Organic Quinoa and Pear Cereal. It was warm and cinnamon-y and the perfect comforting brekkie to hold us over until we could eat again, which was unknown at this point and a slight source of anxiety for me.   Satisfied and caffeinated (me clutching a second latte) we set off, huddled together against the cold, to watch Heather nail her routine…and nail it she did.

I was so eager to recreate the warm, comforting, healthy breakfast we had that I threw this version together as soon as I got home.  I found Kosui pears at the Farmer’s Market.

To make one bowl:

1/2 cup cooked quinoa
1/2 a pear chopped
Small handful of raisins
Small handful of crushed almond slices
Small handful of crushed walnuts
A few pinches of shredded unsweetened coconut
1/2 tablespoon honey
1/4 teaspoon cinnamon
Warm Almond Milk

In a strainer, rinse the quinoa well. Put the quinoa and 2 cups of water in a saucepan. Bring to a boil. Then cover and simmer for approximately 20 minutes or until the quinoa has absorbed the water.

Mix everything together and top with warm Almond Milk.

This morning I kicked it up a notch with cashews, pistachios, pumpkin seeds and Golden berries! Use whatever combo of fruits and nuts you have on hand – it’s guaranteed to be delicious.
