Perpetual Soup with Barley and Avocado
1-2 cups Perpetual Soup
1/2 cup barley
1 avocado to top
Put the barley in saucepan with 1 1/2 cups of water. Bring to a boil. Lower heat, cover and simmer for 30 to 45 minutes or until barley has absorbed all the water. When the barley is almost finished heat 1-2 cups of soup on the stove or in the microwave. When the barley is ready, fluff with a fork and then spoon into a bowl. Top with the soup and chopped avocado.
