Day 3 Dinner Recipe

Kale Farro Bowl

1 cup farro
4 cups salad
1 teaspoon sesame oil
1 ½ tablespoons sliced toasted almonds
1 ½ tablespoons toasted sesame seeds
pinch of salt
2 tablespoons of Spicy Tahini Dressing

Place the farro and 2 and 1/2 cups of water in a saucepan and bring to a boil. Lower the heat and simmer for 20 to 30 minutes until tender. Drain and let cool while you prepare the kale.

Saute the kale mixture in a teaspoon of sesame oil for 1-2 minutes, just until the kale softens a bit and brightens.

Mix the farro and kale mixture together in a bowl. Top with the toasted almonds and sesame seeds and a drizzle of the Spicy Tahini Dressing.
