Day 6 Dinner Recipe
2-4 cups chili
1 cup uncooked quinoa
To serve: cilantro and sunflower seeds
In a strainer, rinse the quinoa well. Put the quinoa and 2 cups of water in a saucepan. Bring to a boil. Then cover and simmer for approximately 20 minutes or until the quinoa has absorbed the water.
While the quinoa is cooking warm the chili in the microwave or on the stove top. Spoon the quinoa into a bowl, top with a few spoonfuls of chili and sprinkle with sea salt, cilantro and sunflower seeds.
