Lunch Recipe:
A bowl of soup or salad accompanied by an Avocado Sandwich
2 slices toasted Ezekiel Bread
1/2 avocado
Optional toppings:
Vegenaise
Chalula
Roasted red peppers
A smear of Tahini
Pickles
My favorite version of this is avocado topped with roasted red peppers, chalula, a smear of tahini and a sprinkle of sea salt. Replacing the tahini with Vegenaise is also extremely delicious but be careful not to use too much – even though its a plant based mayo it’s still high in fat.
