Kale, Brussel Sprout and Broccolini Brown Rice Bowl

This dish looks very similar to the Kale, Brussel Sprout and Broccolini Salad with Creamy Tahini Dressing because it is. Inspired by the Kale Rice Bowl from 101 Cookbooks I sautéed the salad in a bit of sesame oil and added brown rice. The warming of the grain and the slightly softened vegetables carries the bright crunchy salad into a comforting, hearty dish that will have you coming back for seconds and thirds. The creamy tahini dressing I featured with the salad is the perfect compliment.

3 cups cooked brown rice (1 cup uncooked)
3 cups Kale, Brussel Sprout and Broccolini Salad
1 teaspoon sesame oil
A pinch of sea salt
Toasted sesame seeds and almonds to top

Warm the oil in a medium saucepan and saute the vegetables for 2-3 minutes. Add the rice and cook until warm. Add a pinch of salt. Serve with toasted sesame seeds and almonds and a spoonful of the tahini dressing.

Makes 4 – 6 servings
