Moroccan Carrot and Chickpea Salad
I made this salad this weekend for David, Ashleigh and Thibault and it knocked all of our socks off! Really it blew us away. It was different and fresh. The cumin dressing was really tasty and it inspired me to start making more of my own dressings! Heidi Swanson works some real magic on 101 Cookbooks.
At the Ferry Building Farmer’s Market on Saturday morning I found rainbow carrots (which I am currently captivated by) and dried pluots. I also found fresh garbanzo beans from Rancho Gordo. I herbed it up with a healthy handful of fresh basil and dill in addition to the mint. I will absolutely be making this again very soon.
