Chopped Salad with Green Cabbage, Yellow Pepper, Cannellini Beans and Spanish Queen Olives
This is another one of my go to salads. I am filling up on its deliciousness as I write this post. In each bite the crunch of the pepper and cabbage is followed by creamy notes of avocado and cannellini bean. A salty, olive-y punch concludes the perfect bite. Easy, delicious and healthy. I hope you enjoy this salad as much as I do.
6 oz fresh spinach chopped
1/2 a head of green cabbage chopped
1 whole advocado chopped
1 zucchini chopped
1 can of corn
1 can of cannellini beans
1 yellow pepper chopped
1 handful of fresh basil leaves chopped
4-6 Spanish Queen Olives sliced
Put all the veggies in a large salad bowl and mix together. I like to use my hands to do this. Top with the basil, olives, fresh ground black pepper and a few dashes of Girard’s Olde Venice Italian Dressing. You shouldn’t need any salt as the dressing and the olives take care of that.
